Vegetable Frittata 2

Ingredients
4 eggs, beaten
1 cup sliced fresh mushrooms
1/2 cup chopped fresh broccoli
1/4 cup shredded sharp cheddar cheese
2 tablespoons finely chopped onion
2 tablespoons finely chopped green pepper
2 tablespoons grated Parmesan cheese
1/8 teaspoon salt
Dash pepper

Directions
In a large bowl, combine all ingredients.
Pour into a shallow 2-cup baking dish coated with cooking spray.
Bake, uncovered, at 350 degrees for 20-25 minutes or until a knife inserted near the center comes out clean.
Serve immediately.
Yield: 2 servings.
