Campfire Grilled Potatoes

Ingredients:

2 medium baking potatoes, cut into 1/4 inch slices
1 small onion, sliced and separated into rings
1/4 cup mayonnaise
1 tablespoon grated Parmesan cheese
1 garlic clove, minced
1/2 teaspoon minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
2 tablespoons butter

Directions:

In a large bowl, combine mayonnaise, Parmesan cheese, garlic,
parsley, salt, pepper and paprika. Add the sliced potatoes and
onion rings.

Divide mixture into 2 equal portions. Spoon each portion onto a
square of heavy-duty foil. Dot each serving with butter.

Fold the foil into "packets" sealing them well.

Grill over medium heat (over campfire or on grill)
for about 30 minutes. Turn once after 15 minutes.
