MASHED POTATOES WITH A DIFFERENCE
4-6 large potatoes
2 med carrots
2 med onions
1 cup quality mayonaise
2 tblspoons butter
6 cloves roasted garlic

Directions:
Peel and cut potatoes in cubes and steam until tender.
Peel carrots if nessesary and dice and steam until tender.
Peel onions and slice thinly and steam with potatoes until
tender.

Combine potatoes,onions and carrots and mash until fine but leave
a few chunks.
Add butter,mayo and garlic and mix well.
Serve immediately or top with grated cheese (soy or dairy) and
broil until golden.

Serves: 4-6
