POTATO SOUP - MILKLESS
2 tbl butter
1 tbl oil
1 small onion, chopped
3 large carrots, diced
3 to 6 cups diced potatoes
6 cups water
2 tsp salt
1 tsp honey
pepper to taste

Heat oil and butter in 5 quart soup pot.
When melted, add onion and carrots, stir to coat and cook
over gentle heat until hot and inpregnated with fat.
Potatoes may be scrubbed and diced while other vegetable
are cooking.
Add potatoes to pot along with water, salt and honey.
bring to a boil, cover and simmer for 30 minutes.
Puree soup through a coarse sieve or mash with potato
masher until pieces are small.
Add salt and pepper to taste.
