Blackeyed Peas with Tomatoes and Herbs

3 cups blackeyed peas
6 cups water
1 large onion, chopped
1 cup chopped bell pepper
1 cup choppped green bell pepper
2 bay leaves
1 tsp cumin
2 cups chopped tomatoes
1 tbs olive oil
Dash cayenne pepper
1tsp salt

Soak beans in water to cover for 8 hour or over-night;
drain. Add 6 cups water, cover bring to boil. Lower
heat to a simmer and add onion, green bell pepper, bay
leaves and cumin. Return to boil and simmer until beans
are tender, 45 mintues to 1 hour. Remove bay leaves.

Stir in tomatoes, olive oil, cayenne and salt. Cook until
heated through.
