Bombay Potatoes

3 pounds potatoes, peeled and cut into 1 inch cubes
1/3 cup olive oil
3 tomatoes
3/4 cup chopped onion
3 tbs mango chutney
2 - 3 tbs curry powder
1/2 cup water
3/4 tsp salt

Place potatoes in 2-quart saucepan with small amount of water
and boil until tender. Drain and set aside. Heat oil in large
skillet over medium heat.

Add tomatoes, onion, chutney and curry powder.
Cook over low heat 2 to 3 minutes.

Add potatoes, 1/2 cup water and salt
Cook 5 minutes to heat thoroughly.
Makes 6 cups
