Carrot Muffins
Serves 6 to 8

1 cup whole-wheat flour
1 cup oat bran
1 tablespoon cornstarch
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon all-spice
1/2 teaspoon cinnamon
2/3 cup grated carrots
1/3 cup maple syrup
1 cup water
1/4 cup canola oil

Preheat the oven to 375F.

In a large mixing bowl, combine all of the dry
ingredients (flour through cinnamon) and the
grated carrots.

Add all of the wet ingredients, maple syrup
through oil. Mix well.

Pour the batter into a lightly oiled muffin
pan and bake for 25 to 30 minutes, or until
an inserted toothpick comes out clean.
