Chinese Sweet-sour Seitan

1 4 ounce pinapple tidbits, cut into 1/4 inch
cubes and juice
2 tbs oil
3 tbs brown sugar
1/2 tsp salt
2 tbs lemon juice
2 medium carrots, peeled, sliced thin
2 small green peppers, slivered
1 medium tomato, slivered
1 tbs flour
14 ounces seitan cut into 1/4 inch cubes

Drain pinapple juice and heat with oil,
salt, sugar and lemon juice.

Add carrots, green peppers and tomato, cover
and cook for 5 minutes.

Dissolve flour in water, stir into mixture, cook
until thickened and smooth.

Add seitan and pineapple, heat through.
