Chinese Won Ton

2 cups sifted flour
1 tsp salt
1 egg (vegan egg substitute)
1/3 cup water

Sift flour into bowl.

Stir in egg, gradually add water, mixing
lightly until dough is formed.

Knead dough on a lightly floured surface until very smooth.
Cover with a bowl and let stand for 30 minutes.

Roll out as thin as possible and cut into 3 or 4 inch squares.

Place a tablespoon of filling (below) in center; fold into
triangular shape; press edges together and seal.

Deep fry until golden brown or cook in boiling water or soup.

Won Ton Filling

14 ounces seitan
1/4 cup chopped green onion with tops
1/4 cup chopped onion
1 tbs oil

Saute seitan, onion in oil.

Spoon in a tbs of filling onto each won ton shell.

Yield 12
