Red Onion Chutney

1 cup coarsely chopped red onions
1/2 cup water
2 tbs chopped fresh cilantro
1 tsp salt
Juice of 1 medium lime (2 tbs)
2 or 3 fresh Thai, serrano or cayenne chilies

1. Place all ingredients in blender. Cover and
blend on medium speed utnil smooth. Chutney
will thicken as it stands; if it becomes too
thick, stir in additional water until it
reaches consistancy of a thick pesto.
2. Tightly cover and store in refridgerator up 1
week.
