Southern Crookneck Squash

2 tbs water
2 tbs minced onion
3 cups diced yellow crookneck squash
1/2 to 3/4 cup soymilk
1/2 tsp salt
1/4 ground while pepper
2 tbs finely minced fresh parsley

Heat water in a medium saucepan over medium high heat, add the
onion and lightly cook, stirring ntil the water has evaporated,
about 3 minutes. Add the squash, enough milk to almost cover.
Salt/pepper. Cook on very low heat until squash is tender,
about 5 or 6 minutes. Garnish with parsley.
