VEGI-Mac Skillet

Stir-frying MAC in hot oil gives it a toasty new taste.

2 cups uncooked macaroni
Medium onion, diced
Medium green pepper, diced
1 teaspoon minced garlic
1/2 cup vegetable oil
6-ounce can tomato paste
2 1/2 cups water
1 teaspoon mixed Italian seasoning
2 cups diced, cooked vegie suasage, stips or tempeh
Salt, pepper to taste

Stir-fry the macaroni, onion, pepper and garlic in hot oil until
vegetables are limp and pasta is golden.
Add everything else but the vegie sausage, salt and pepper.
Bring to a boil, cover, reduce heat and cook, stirring once or twice,
20 minutes or until pasta is tender.
Stir in vegie sausage to heat through, adjust seasonings and serve.

Serves 4 to 6.
