SUPER SOY BURGER

Amount Measure Ingredient -- Preparation Method

Pan spray
1 1/2 cups soybeans -- cooked and mashed
3/4 cup brown rice -- cooked
1 egg
3 tablespoons soy sauce
5 scallion -- minced
1 tablespoon nutritional yeast
1 tablespoon cornstarch
2 tablespoons dijon mustard
2 tablespoons fresh mixed herbs -- chopped
salt & pepper -- to taste

1. Preheat oven to 400 degrees.

2. In a large bowl, thoroughly combine all ingredients.
Let rest for 15 minutes.

3. Form mixture into 8 patties. Place on cookie sheet and
bake for 30 minutes, or until golden brown.

NOTES : Makes 8 4-ounce patties.
