BARLEY AND MUSHROOM CASSEROLE

4 T olive oil
1 c. onions, chopped
12 oz. mushrooms, sliced
1 c. barley (broken?)
3 c. chicken broth (for total vegetarian, use Knorr Vegetable Soup)
3 cloves garlic
1/2 t. thyme
1 t. salt

Heat 2 T oil, add onion .. cook til soft, add mushrooms,
cook til soft, stir the other 2 T. oil into the barley to
coat, add to the pan.

Pour broth/soup over barley, add garlic, thyme, salt, add
mushroom and onion,bring to a boil. Reduce heat to simmer.
Cover and cook for 40 min, or til barley is soft.

Serves 6 makes 3-3.5 cups
