CHILE RELLENO CASSEROLE
Ingredients:
6 Pasillo Chiles
8 eggs (separated)
1T flour salt & pepper
1/2 lb. or so Monterey Jack Cheese
green or red salsa

Directions:
Blister chiles under broiler on all sides, and place in a
plastic bag for 5 minutes.Under water,peel the top layer
of white skin only off the chiles. Remove seeds and stems
and lay open the chiles to dry on a paper towel.

Beat egg whites until stiff peaks. Add flour, salt &
pepper to yolks and add slowly to whites mix ing them
together. Pour half of egg mixture into greased pan, then
chiles, then cheese, then the rest of the eggs.Bake 30
min. at 325. Serve with salsa.
