Zucchini Casserole

6 cups zucchini, cubed
1/2 cup onion
1 cup carrots, grated
1 can cream of chicken soup
1 cup sour cream
1 (8-oz) pkg. Stove Top Stuffing Mix
1/2 cup melted butter or margarine

Preheat oven to 350. Boil zucchini and onions in a little water.
Add soup, sour cream and carrots. Combine stuffing mix with butter.
Add 3/4 of stuffing mixture to zucchini mixture.
Pour into greased 9x13 pan.
Top with remaining stuffing mixture. Bake for 30 minutes.
